STEELHEAD TROUT IN SHALLOT BUTTER SAUCE WITH ROASTED FINGERLING POTATOES
June 11, 2017 – Steelhead trout is a wonderful fish for people who are not too sure about cooking fish. It is easy to work with, it tastes fresh and clean, and does not have a strong fishy smell at all. In this dish, the fish is seared on both sides until it is nicely done and then topped with a sauce made with shallots and butter with capers and condensed milk. It is a rich, creamy sauce that adds a very upscale flavor to the dish. The roasted potatoes are a nice side, and I also added some steamed broccoli for a touch of green.
