Summer is the time of year when you are looking for something sweet and fresh and cold to drink that isn’t loaded with calories and bad stuff. This quick smoothie is perfect for those cravings. It literally has only four ingredients and two of them are ice and water!
Can you guess what the other two are? Yep! Pineapple and mint! Yay! Gold star for you! Seriously, this drink goes together so easily you won’t believe how fast it is.
All you do is cut a fresh pineapple into chunks and toss them in the blender. Then you add a handful of mint leaves. I used pineapple mint this time because it is going wild in my garden and it is oh-so-yummy in this recipe! You can substitute canned pineapple chunks in this recipe, but the flavor is not nearly as fresh. Also, frozen pineapple chunks work, but you will need to adjust the amount of ice you add accordingly.
Then you add some ice cubes, and a little bit of water…and you’re done! Pulse your blender a few times until everything is all chopped up and whirled together.
Then, just pour it into a tall glass, add a couple of mint leaves and a nice chunk of fresh pineapple as a garnish…and finish it off with a straw. You will be amazed how well the pineapple and mint go together.
This drink is perfect for a quick refreshing pick-me-up or even a healthy snack when you want something cool and refreshing. For a change of pace, you can substitute coconut milk for the water, and have a completely different flavor that is smooth and creamy and super yummy! Enjoy!

- 2 cups fresh pineapple, peeled, cored and cubed
- ¼ cup fresh mint leaves
- 1½ cups ice cubes
- ¼ cup water (You can substitute coconut milk for a different flavor!)
- Add all ingredients to your blender in the order given
- Pulse blender repeatedly until ingredients are chopped and smooth
- Pour drink into a glass and garnish with mint leaves and pineapple
