CHIMICHURRI STEAK WITH ROASTED POTATOES
July 5, 2017 – Chimichurri Steak with Roasted Potatoes – This was such a quick, simple meal, but it was loaded with great flavor. Roasted potatoes are always a great side choice for my “meat and potatoes” hubby, and adding the seared and roasted tomatoes was a tasty, and healthy choice as well. The steaks cooked up tender and juicy, as usual, with perfectly seared edges, and warm red centers….just the way we like them! The chimichurri sauce was a nice addition to this simple meal. It was made with a combination of fresh parsley, freshly chopped garlic, red wine vinegar, oregano and olive oil. After combining the ingredients, it sits for a few minutes to let the flavors marry. Then, you drizzle a bit over your steak to really enhance the flavor of a plain piece of meat. The Italian flavors in the chimichurri sauce went perfectly with the potatoes and roasted tomatoes.
